Discovering Pisco: Peru’s Liquid Gold

Before we embark on our mixological adventure, let’s take a moment to acquaint ourselves with the star ingredient: Pisco. Pisco is a 100% grape brandy produced on the central and southern coast of Peru in fertile valleys with high temperatures. It is a denomination of origin spirit, meaning that it can only be produced in 5 specific regions of Peru, to which the pisco-making process is both historically and culturally bound. These include Lima, Ica, Tacna, Arequipa, and Moquegua.

For more than 500 years, Peruvian pisco grapes have been adapting to the climate, soil, and interbreeding. Today, it is only made with eight specific varieties. These include the four aromatic grapes Albila, Italia, Muscatel, and Torontel, and the four non-aromatic grapes Mollar, Negra Criolla, Quebranta, and Uvina.

Pisco is transparent, colorless, without particles in suspension, and distilled only once. No water can be added when making pisco, and it is not aged. After the single distillation, it must rest for a minimum of three months in ceramic, glass, stainless steel, or another inert material. Finally, the spirit must be bottled between 38% and 48% alcohol by volume (ABV), or 76 to 96 proof.

Crafting the Magic

  1. Prepare Your Glass: Begin by filling a coupe glass with ice to chill it while you prepare the cocktail.
  2. Shake, Shake, Shake: In a cocktail shaker, combine the simple syrup, lime juice, Pisco, and egg white. Close the shaker and shake vigorously for 15 seconds, ensuring a smooth blend.
  3. Chill and Shake Again: Add 6-7 large ice cubes to the shaker and shake once more, this time with gusto, for an additional 30 seconds. This double shake ensures the perfect frothy texture that sets the Pisco Sour apart.
  4. Strain and Swirl: Discard the ice from the coupe glass and strain the drink mixture into the glass until it’s half full. Then, with the strainer still in place, gently swirl the shaker in a circular motion to create a foamy crown.
  5. A Touch of Elegance: Now, for the finishing touch, add three drops of Angostura bitters to the frothy surface. Using a toothpick or the end of a knife, create a mesmerizing marbled pattern that not only delights the eyes but also enhances the flavor profile.

A Taste of Peru

As you take that first sip, you’re not just tasting a cocktail; you’re savoring the spirit of Peru itself. The crisp bite of the Pisco, the tangy zest of the lime, and the silky smoothness of the egg white dance harmoniously on your palate, leaving you craving more.
